Easy Almond Flour Banana Muffins
Muffin Monday is a weekly theme here for breakfast. For it to be successful though I’ve learned two things:
keep a few super easy recipes on deck
make sure they’re filling and nutrient-dense
…otherwise, you’ll feel like you’re spending extra time basically feeding your family dessert for breakfast ;)
Using almond flour is a great way to bump up the nutrition while creating something super kid-friendly and tasty. Costco carries a great blanched almond flour - we’ve used it for years. The added eggs help too since only a couple of my kids eat eggs in their whole form. And quality eggs are really so nutritious - protein, omega-3s, choline, antioxidants, and 13 different vitamins and minerals! A true powerhouse I tell you.
If you ask my 4-year-old how she likes her eggs she’ll tell you: “in cake”!
And muffins are pretty close to cake. Yet these muffins are sweetened by bananas! Bananas and almond flour are such a perfect combination - these are surprisingly light with a great crumb…especially for a gluten-free muffin. Adding dark chocolate chips just makes them even more delicious and kid-friendly! They’re extra amazing still slightly warm out of the oven - slathered with grass-fed butter. They also make great snacks. I love using my mini muffin pans from Pampered Chef - perfect for hikes! Just be sure to use a structured container so they don’t get smashed :)
Simple Star Ingredients
Bananas: use overripe bananas with lots of brown spots. Not only will they be less starchy and blend more easily, but the extra sweetness is definitely a perk!
Almond flour: We buy the Costco 5lb bag - it’s blanched (to remove the skins) and the quality is great. It’s not super fine, but finer than a courser almond meal.
Eggs: whole organic eggs from pasture-raised hens are ideal, but use what you can source. Vegans are welcome to try using ‘flax egg’, but I haven’t tried this substitution. The texture will be different.
Chocolate chips or other add-ins: We love the Kirkland Chocolate Chips from Costco in the white bag. If you need them to be sugar-free, try Lily’s brand chocolate chips!
